When using the trackpad, it will get in some crazy mode where it won't move the mouse smoothly unless I use two fingers. It is almost like the pad is in two finger scroll mode and mouse movement mode at the same time. Does anyone know how to reset the trackpad so that it will move the mouse with 1 finger?

Yikes, that doesn't sound good. I don't know about Chrome OS, but in most OSes there's a setting where you can adjust how the trackpad tracks your finger. Is there something like that in Chrome OS's settings?

That doesn't sound to good either, it may be in the software settings that is set up or possibly you have a defective keypad =/

Have you tried messing with the track pad settings in Tools > Settings > System? How long has this been happening for? Have you tried rebooting your Chromebook?

Yeah, I would go in to the systems menu and try fiddling with the settings. It could be on some really goofy setting for some reason. Once you have tried that let us know. Maybe we can help trouble shoot this.
